Pork bacon

Ingredients

  • Simerville Farm pork belly
  • 1 package of pork belly spice mix
  • A large enough zip lock bag to hold the Simerville Farm pork belly or multiple bags to hold pieces separate

Directions

  1. Thaw Simerville Farm pork belly square up the meat so it will be easier to slice.
  2. Cut Simerville Farm pork belly into pieces that can fit into the zip lock bags.
  3. Cover Simerville Farm pork belly in pork bacon spice mix and insert into the zip lock bag(s).
  4. Massage the spice mixture into the Simerville Farm brisket then place into the fridge.
  5. Once a day massage the Simerville Farm pork belly, flip over and put back into the fridge. Do this for 6 to 8 days.
  6. Once the Simerville Farm pork belly has been marinading for the 6 to 8 days remove from the fridge and wash the Simerville Farm pork belly in running water to remove the excess spice mix. Pat dry.
  7. At this point you can slice and package you Simerville Farm pork belly OR you can smoke it at a low temperature (175F-ish) for two hours or to your preferred level of smoke. You are not trying to cook the Simerville Farm pork belly at this time you are just imparting smoke to it so no need to smoke it for hours and hours.
  8. If you smoked your Simerville Farm pork belly I find it far easier to cover it with a cloth and cool it in the fridge overnight before slicing. When slicing thick is better than thin in my opinion.
  9. Fast fry in a pan over medium heat. Enjoy!
