- Saute diced onion in butter until soft.
- Add diced carrot and a pinch of salt. Cook for a couple minutes.
- Add Chicken or Turkey as well as cut up potatoes and a bit of salt, pepper, oregano and basil (or whatever your go to leafy seasoning is) and mix lightly.
- Add broth, milk, corn and creamed corn. Stir.
- Bring to a boil, then turn down to a high simmer.
- Cook for 25 minutes or until potatoes are cooked, stirring occasionally.
- Remove from heat and let sit for 10 minutes or so.
