Chicken/Turkey Corn Chowder

  • 3 tbsp butter
  • 1 Onion
  • 1 large carrot
  • 2 cups of shredded Simerville Farm Chicken or Turkey
  • 3 Potatoes
  • 1 can (398ml) creamed corn
  • 2 cups frozen corn (thawed)
  • 2 cups Chicken or Turkey broth
  • 3 cups milk (I used buttermilk but 2% would also work fine)

  1. Saute diced onion in butter until soft.
  2. Add diced carrot and a pinch of salt.  Cook for a couple minutes.
  3. Add Chicken or Turkey as well as cut up potatoes and a bit of salt, pepper, oregano and basil (or whatever your go to leafy seasoning is) and mix lightly.
  4. Add broth, milk, corn and creamed corn.  Stir.
  5. Bring to a boil, then turn down to a high simmer.
  6. Cook for 25 minutes or until potatoes are cooked, stirring occasionally.
  7. Remove from heat and let sit for 10 minutes or so.
  8. Serve.
